4 Ingredients Lemon Mousse

A refreshing dessert is always appreciated in warm weather. Here's a super easy recipe, you can play with all toppings you want!

Ingredients:
4 eggs
110 g caster sugar
110 g lemon jiuce (about 3 medium size lemon)
500 g whip cream (Dairy Free if desired)
Method:
1. Start by making the lemon curd. In a small-meduim size pot, mix sugar and lemon jiuce. Let it sit for 3minutes
2. Add the eggs and mix until well combined
3. Put in a very lower heat and stir until thickened (may take 10-15 minutes)
4. Pour your lemon curd in a bowl, cover it with the plastic wrapper and let it cool down completely before putting in fridge to get cold.
5. Once your lemon curd is cold, beat the whip cream until half stiff.
6. Add 3/4 of lemon curd and continue beating until almost stiff (the consistency must be smooth and not stiff)
7. Transfer your mousse in a desired container and garnish with the remaining lemon curd.
8. Let it sit in the fridge for atleast 30 mins. Resist the tempatation to eat them!
Tips:
To cool down your lemon curd quickly, put a bowl in the freezer before starting. And use it when you are in step 4.
Garnish your mousse with creativity: you can change topping with whatever you want!
