Apple Cake (Gluten and Dairy Free Version)

A very light and easy way to eat apple for all celiacs.

 

Ingredients:


5 medium size green apples

1 lemon

3 eggs

1 cup vegetable oil

1 cup water

3 cups rice flour

2 cups sugar

2 tbp baking powder

Zest of one lemon



Method:

(Preheat the oven at 180°C)

1. Peel apples and cut them into cubes. Soake them in water and lemon juice. Set aside.

2. In a large bowl, mix all liquid ingredients (eggs, water, vegetable oil)

3. Add lemon zest into the mix.

4. Add sugar and mix.

5. In another container, sift together flour, baking powder.

6. Mix solid ingredients with the liquids until smooth.

8. Drain apples and add them into the mixture.

9. Pour the mixture into a 20cm oiled pan

10. Bake for 45 minute at 180°C


For decorations:

Slice apples in halfmoon and squeeze some lemon juice, put them on the top of the dough with some springkles of cane sugar before baking.
