Vegan Dalgona Cake

This trending dalgona coffee makes everyone crazy, so I decided to put it on a cake. A spongy dalgona cake with a bit of cocoa powder and a dalgona frosting you'll love!
Ingredients and method:
For dalgona cream:
30 g instant coffee powder (a good quality is so much better)
30 g granulated sugar
30 g warm water
Method:
Beat all ingredients in a bowl until smooth and fluffy. (this process may take up to 10 minutes)
set a side 2/3 of dalgona cream for frosting
For dalgona cake:
1/3 of dalgona cream prepared before
50 g cane sugar
20 g vegetable oil
10 g white vinegar
30 g water
100 g flour
10 g cocoa powder
5 g baking powder
5 g baking soda
Method:
(pre- heat the oven at 180°C and add a pan with the boiling water at the bottom)
Beat dalgona cream with sugar, oil, vinegar water for atleast 5 minutes
Add sifted flour, cocoa powder, baking powder and baking soda, then mix until all dry ingredients are well incorporated. (You can do this process by hand with the help of a spatula or just put your mixer in a lower speed when mixing)
Pour the mixture in a 15 x 5 cm baking pan
Bake for 40 minutes at 180 °C ( it may take more time as it doesn't have eggsand depends of your oven, so make sure you check the center of your cake with the use of a clean toothpick before taking it out)
For dalgona frosting
2/3 of dalgona cream
30 g of confectioner sugar
Method:
Beat in high speed dalgona cream for at least 3 minutes
Add confectioner sugar and mix for another 5-8 minutes until stiff peaks
Use your frosting to decorate your cake or just on the side of your cake. This frosting can also be used for your dalgona coffee.
